Stilton & Potato Cake
With wonderful flavours this easy to make dish is the perfect accompaniment to a main dish, or great on its own as a light lunch.
Serves 2 as a main course. 4 as an accompaniment
2 sliced onions
1 tbsp oil
2 large cooked potatoes – cooled and cubed
6 medium eggs
2tbsp single or double cream
100g/4 oz crumbled Blue Stilton Cheese
1 tsp chopped chives
1. Heat the oil in a leage frying pan, add the sliced onions and gently fry until caramelised. Add the cubed cooked potatoes.
2. Mix together the eggs, cream, crumbled Stilton, chopped chives and season with black pepper.
3. Pour cheese mixture over the potatoes and onions and cook over a low heat until nearly set, finishing under a hot grill. Sprinkle extra cheese over if required.
Serve with a green salad and crusty bread.
