This is one of those delightfully quick and easy to prepare pasta dishes yet special enough to make if you are entertaining. Serves 4
Fresh or dried egg pasta of your choice
1 tbsp olive oil
1 bunch spring onions, sliced including green part
2 garlic cloves, crushed
100/ 4oz smoked bacon or pancetta, diced
100g/ 4oz chestnut mushrooms, sliced
2 tbsp fresh basil
2 tbsp parsley, chopped
250g tub mascarpone cheese
freshly ground black pepper
1. Heat the oil in a large saucepan, add the spring onions, garlic, bacon and mushrooms and fry until the
bacon is crispy. Drain on kitchen paper.
2. Meanwhile cook the pasta. Drain and return to the pan.
3. Add the mascarpone, basil, parsley and black pepper stir until fully heated.
4. Serve immediately with a fresh green salad.
