Oven Roast Salmon and Baby Potatoes
A stylish and easy to make one pot supper
1 kg baby potatoes
2 tbsp olive oil
1 red onion, peeled and thinly sliced
4 skinless salmon fillets
Juice and grated rind 1 orange
Sprinkling of fresh chopped dill
1. Place the washed potatoes in a roasting tin with the olive oil and a sprinkling of sea salt. Roast in a pre-heated oven Gas 5/ 190C for 15 minutes then scatter over the sliced onion and cook for a further 15 minutes.
2. Increase the oven temperature to Gas 7/220C and place the salmon fillets between the potatoes and onions. Drizzle over the orange juice and rind and a grinding of black pepper. Then sprinkle over the dill, use dried dill if you can't get fresh.
3. Roast for a further 10 minutes until the salmon is cooked through. Try serving with stir fried greens or a salad.
